Use orzo pasta as a bed instead of rice, it's not as gritty.

Make this as the side dish:

Cumin Polenta
14 oz chicken broth (or use 1 chicken bullion cube + water)
1 tsp ground cumin
1/2 c yellow cornmeal
1/2 c milk (whole is best, if you have a lower percentage just stick a bit of sour cream in with the milk and stir it around that way it is "thicker")
1/2 tsp butter

combine broth and cumin in a heavy saucepan; bring to a boil. reduce heat; gradually whisk in cornmeal. cook and stir *constantly* until thick, whisk in milk and butter. season with salt and pepper.

serves 4ish

This is half portions of the original recipe and it makes a huge amount for just W and I. I can't imagine doubling the above!

Perfect side with the Shrimp!
